Almond Carrot and Apple Protein Muffins


These muffins are truly incredible, if I do say myself. Not only are they delicious, they are super easy to make.  Full of protein these can be a breakfast in a pinch or a blood sugar balancing afternoon snack.

Ingredients:

  • 4 eggs 
  • 1 apple (grated) 
  • 3 carrots (grated ) 
  • cup honey or maple syrup 
  • 2 tsp pure vanilla 
  • 2 cups almond flour 
  • 1 cup shredded coconut 
  • ½ cup walnuts 
  • ½ cup goji berries (dried) or raisins
  • 2 tsp cinnamon
  • 2 scoops vanilla protein powder
  • ½ tsp baking soda 
  • 1 tsp baking powder
  • ½ tsp sea salt 

  • Directions: 

  • Mix wet ingredients in a bowl. Mix dry in a separate bowl. Combine wet and dry- mixing well
  • Preheat oven to 350 and line muffin tins with papers
  • Spoon batter into tins about 3/4 full (batter will be thick )
  • Bake 30-40 minutes until golden brown
  • Allow to cool before removing from pan
