These muffins are truly incredible, if I do say myself. Not only are they delicious, they are super easy to make. Full of protein these can be a breakfast in a pinch or a blood sugar balancing afternoon snack.

Ingredients:
4 eggs
1 apple (grated)
3 carrots (grated )
⅓ cup honey or maple syrup
2 tsp pure vanilla
2 cups almond flour
1 cup shredded coconut
½ cup walnuts
½ cup goji berries (dried) or raisins
2 tsp cinnamon
2 scoops vanilla protein powder
½ tsp baking soda
1 tsp baking powder
½ tsp sea salt
Directions:
Mix wet ingredients in a bowl. Mix dry in a separate bowl. Combine wet and dry- mixing well
Preheat oven to 350 and line muffin tins with papers
Spoon batter into tins about 3/4 full (batter will be thick )
Bake 30-40 minutes until golden brown
Allow to cool before removing from pan
