These are a perfect snack with a cup of tea in the afternoon.
Ingredients
2 c Raw sunflower seeds
1 c Dates (pitted)
1T Cinnamon
1-2 T Coconut oil
1 t Powdered ginger
½ t Cardamom
Pinch Salt
1-2 T Maple syrup OR Raw honey
½ c Shredded coconut (unsweetened)
Instructions
Combine seeds, spices and salt in food processor with S-blade until finely ground ~ 1-2 minutes
Add dates, syrup and oil until sticky. Add more sweetener if necessary
Roll mixture into balls and coat in shredded coconut
Store in a fridge for 2 weeks
